4 Fillet Cod
1 Can (15 oz) Navy Beans
1 Can Tomatoes
1/2 Small Red Bell Pepper
1 Tbsp Lemon Peel
1 Tsp, ground Basil
Preheat oven to 200 C.
Chop bell pepper and grate lemon rind.
Place fish in a baking tray and season as you prefer.
Sprinkle beans over the fish, then top with tomato, bell pepper, lemon rind and basil.
Cover and bake for 35 - 40 minutes.
