1 Tbsp Olive Oil
1 Lb Chicken Breast
3 Cloves, minced Garlic
1 Can (15 oz) Tomatoes
1/2 Tsp Crushed Red Pepper Flakes
1 Tbsp Parsley
1 Cup, shredded Mozzarella Cheese
10 Slice round Pepperoni
Heat oil in a sauté pan over medium-high heat.
Cook chicken about 5-6 minutes per side or until cooked through and no longer pink.
Preheat oven to 350 degrees F.
Season the chicken with salt, pepper, and garlic powder.
Meanwhile, sauté the mushrooms and pepper rings in butter until slightly tender, but not mushy; set aside (about 5-7 minutes).
Spread the sauce over the chicken, then top with the pepperoni, the pepper rings, mushrooms and then finally, the cheese.
Bake for about 10-15 minutes or until hot and the cheese is melted.
Serve at once.
