3 Cup Chickpeas
1 Cup chopped Carrots
4 Small (3" long) Scallions
1/2 Cup (not packed) Raisins
4 Oz Cashew Nuts
2/3 Cup Hummus
1 Lemon yields Lemon Juice
1 Tbsp Curry Powder
3/4 Tsp Garlic Powder
1 Tsp Sea Salt
12 Slice Whole-Wheat Bread
6 Leaf outer Lettuce
In a small bowl, combine thinned hummus with lemon juice, curry, garlic powder, and a generous pinch of salt.
Blend until combined.
Set aside.
In a medium mixing bowl, add chickpeas and roughly mash about 1/2 of the beans with the back of a sturdy fork or potato masher.
Add in the carrots, sliced scallions, raisins, cashews, and hummus; mix well to combine.
Taste for flavor adding salt and cracked pepper to taste.

Spread about a 1/2 cup of salad onto a slice of bread, top with lettuce leaf and second slice of bread.
