1 Breast, bone and skin removed Chicken Breast
1 Tbsp Olive Oil
1/4 Cup chopped Onions
1/4 Cup, (not packed) Cottage Cheese
1 Leaf, large Lettuce
1 Tbsp Dijon Mustard
Heat oil in a pan over medium-high heat and add chicken to the pan.
Cook for 8-12 minutes until chicken is cooked through and no longer pink.
Remove from heat and set aside.
Chop green onions and combine with chicken and cottage cheese.
Scoop into lettuce leaves, season with a little dijon, wrap and serve.
