2 1/4 Cup Tortellini
1 Medium (2-1/2" dia) Onions
1 Cup cherry tomatoes Cherry Tomatoes
1 Medium (approx 2-3/4" long, 2-1/2 dia.) Red Bell Pepper
4 Oz Beef Salami
1/3 Cup Red Wine Vinegar
2 Tbsp Olive Oil
1 Tsp Lemon Juice
1 Dash Salt
1 Dash Pepper
1 Tbsp Parsley
Bring a large pot of salted water to a boil and cook the tortellini according to package directions.
Drain and run briefly under cool water to cool the tortellini down.
In a large bowl, combine the cooked tortellini, chopped onions, bell pepper, and salami.
Whisk together red wine vinegar, olive oil, lemon juice, salt, and pepper, then toss with pasta until combined.
Taste and season with additional vinegar, salt, and pepper if necessary.
Stir in chopped parsley just before serving.
