1/2 Tsp Olive Oil
1 Medium (approx 2-3/4" long, 2-1/2" dia) Green Bell Pepper
2 Large Egg
1/2 Oz Feta Cheese
Heat oil in a skillet over medium heat.
Add chopped peppers and cook until tender.
Beat the eggs and add to the skillet with the peppers.
Stir slowly over medium-low heat until they reach your desired doneness.
Sprinkle in the feta cheese and stir to combine and soften the cheese.
Serve immediately and enjoy!
