Quick Easy Poached Salmon Healthy Recipe

Ingredients

4 cups (946 ml) water
2 tablespoons (30 ml) lemon juice
1/4 cup (30 g) carrot, thinly sliced
1/2 cup (80 g) onion, thinly sliced
1 bay leaf
1 tablespoon (4 g) fresh dill, chopped
1/2 pound (225 g) salmon fillets

Directions

Preheat oven to 350°F (180°C, or gas mark 4).

Combine all ingredients except salmon in a saucepan and heat to boiling.

Reduce heat and simmer 5 minutes.

Place salmon in a glass baking dish large enough to hold salmon in a single layer; pour poaching liquid over.

Cover and bake for 20 minutes, or until salmon flakes easily.
