1 Large Zucchini
0 Cup, shredded Mozzarella Cheese
10 Slice round Pepperoni
1/4 Medium (approx 2-3/4" long, 2-1/2 dia.) Red Bell Pepper
1/4 Cup sliced Mushrooms
Slice zucchini into rounds and place slices side-by-side on a microwave safe plate.
Sprinkle cheese on top of zucchini.
Lay pepperoni down evenly dispersed.
Top with bell pepper and mushroom slices.
Sprinkle more cheese on top.
Microwave for 4-5 minutes or until the vegetables are tender and cheese is fully melted.
