2 Tortilla Tortillas
2 Extra large Egg
1/4 Cup, sliced Red Bell Pepper
1/4 Cup, chopped Onions
1/2 Oz Mozzarella Cheese
1/2 Oz Monterey Cheese


Heat tortillas in a fry pan until soft.

Remove from pan and spray pan with non-stick spray.

Add onion and peppers and sauté until peppers are tender and onions are translucent.

Add egg, stir, add mozzarella, and stir as needed.

Remove from pan.

Return 1 tortilla to the pan

Add 1/2 of the monterey to bottom shell, add scrambled eggs.

add remaining monterey, and top tortilla.

squish together and let cook until bottom tortilla is browned.

Flip and continue to cook, browning evenly and allowing cheese to melt.

Slice, serve, and enjoy!
