2 1/4 Cup dry Orzo
1/4 Tsp Lemon Zest
3 Tbsp Lemon Juice
1 Tbsp Olive Oil
1/2 Tsp Salt
1/2 Tsp Garlic
1/4 Tsp Honey
0 Tsp Pepper
1/2 Cup Olives
1/2 Cup slices Cucumber
1/2 Cup, chopped Red Bell Pepper
1 Cup, chopped or sliced Tomatoes
1/3 Cup, chopped Scallions
1 Tbsp Dill
1/2 Cup Goat Cheese
Cook orzo according to package directions until al dente.
Drain and rinse with cold water; drain and place in a large bowl.
While the orzo cooks, combine lemon rind and next 6 ingredients (through black pepper), stirring well with a whisk.
Drizzle juice mixture over orzo; toss to coat.
Add the olives, cucumber, red bell pepper, tomatoes, scallions and dill to the pasta and dressing; toss gently to combine.
Sprinkle with goat cheese.
Can be chilled or served immediately.
