1/2 Cup Brown Rice
1 Tbsp Canola Oil
1 Small Red Bell Pepper
1 Medium Carrots
1 Cup flowerets Broccoli
6 Oz Chicken Breast
2 Cloves, minced Garlic
1/3 Cup Soy Sauce
1 Tbsp Ginger
5 Leaf, whole Basil
Prepare rice as per package directions; set aside.
Heat oil in a pan over medium heat.
Cook peppers, carrots, and broccoli in olive oil until tender, 5-10 minutes
Once veggies are cooked, add chicken breast slices, and cook until chicken is cooked through and no longer pink, 8-12 minutes
Add garlic, ginger, and soy sauce.
Remove from heat and mix in chopped basil leaves
Mix with rice and serve.
