1 Medium (approx 2-3/4" long, 2-1/2 dia.) Red Bell Pepper
1 Medium (2-1/2" dia) Onions
1 Medium whole (2-3/5" dia) Tomatoes
1/2 Cup Spinach
6 Large Egg
1 Dash Salt
1 Cup, shredded Cheddar Cheese
Preheat the oven to 400 degrees F.
Wash and dice the pepper, onions, spinach, and tomatoes and put them in a large mixing bowl.
Add the eggs, cheese, and salt and mix well.
Grease the muffin tin with oil and pour the egg mixture evenly into the muffin slots.
(If you think they might still stick to the pan use some muffin cups)
Pop the tray into the oven for 15-18 minutes or until the tops are firm to the touch.
