Ingredients

1/2 Medium Zucchini
1 Medium (approx 2-3/4" long, 2-1/2 dia.) Red Bell Pepper
1 Tsp Garlic
1 Extra large Egg
6 Tbsp Egg White
1 Dash Salt
1 Dash Pepper
1 Spray , about 1/3 second Pam Cooking Spray
3 Slice oval Sliced Ham
1/4 Cup, shredded Cheddar Or Colby Cheese
1 Tsp Lemon Pepper Seasoning

Directions

Cut up veggies into small pieces

Mix egg whites and egg in a small bowl with seasonings

Heat up a fry pan on medium heat and spray with cooking spray

Add cut up ham, garlic, and veggies.

Cook until golden.

Take everything out of pan.

Add egg mixture and let cook.

Add the cheese when the egg is semi solid and then add the veggies and ham.

Flip omelet and cook until cheese is melted and eggs have reached desired doneness.
