8 Oz Pasta
4 Cup, chopped or diced Broccoli
2 Tbsp Butter
4 Slice (6 per 6-oz pkg.) Canadian Bacon
4 Medium (4-1/8" long) Scallions
2 Tbsp Wheat Flour
1 Cup Lowfat Milk
1 1/2 Cup, shredded Cheddar Cheese
1/4 Cup Parmesan Cheese
Bring a large pot of salted water to a boil.
Add pasta and cook as per package directions.
Add broccoli during the last 3 minutes of cooking.
Reserve 1 cup water, then drain.
Melt butter over medium heat.
Add bacon and cook.
Remove from pan and place on paper towel.
Add scallions, salt and pepper to pan.
Add 2 tbsp flour and whisk.
Whisk milk and reserved pasta water.
Cook until thickened.
Add cheeses.
Stir in pasta, broccoli, and bacon into sauce.
Toss until coated and serve.
