1 Large Egg
1 Oz Marinara Sauce
1 Muffin English Muffins
1 Oz Mexican Cheese
2 Slice round Pepperoni
Preheat oven to broiler.
Coat a small nonstick skillet with cooking spray and place over medium heat
Beat egg and then scramble in in the skillet, stirring often, until set into soft curds.
Split the muffin and toast.
Spread marinara sauce on English muffin halves.
Top with the scrambled egg, cheese and pepperoni.
Place in the oven to broil until the cheese is melted, remove and serve.
