1 1/2 Cup Canned Black Beans
1/2 Cup Brown Rice
4 Tbsp Salsa Verde
1/2 Cup, chopped Zucchini
1/2 Cup, sliced Red Bell Pepper
1 Tsp Vegetable Oil Spread
1 Oz Cheddar Or Colby Cheese
Prepare the brown rice according to the package's instruction.
In a pan, heat the vegetable oil and saute the chopped red bell pepper and chopped zucchini.
Cook until vegetables are tender
Add the black beans (including the cooking liquid) to the vegetables.
Add the salsa and heat through.
Turn off the heat and mix the brown rice and cheese into the bean and vegetable mixture.
