1/3 Cup grated Carrots
2 Tbsp Peanut Oil
1/4 Cup, chopped Onions
1 Large Egg
1/4 Cup, chopped Red Bell Pepper
1 Cup Panko Bread Crumbs
2 Tbsp Fresh Cilantro
1 Clove Garlic
15 Oz Bushs Best Black Beans
In a food processor, blend in batches the oil, carrots, onions, red bell pepper, cilantro, garlic, and black beans until it reaches a paste-like consistency.
Transfer the mixture into a bowl and add in the egg and most of the panko crumbs, saving some for coating later.
Form the mixture into patties and coat with the remaining panko.
Refrigerate the patties for about 10-15 mins.
Pan fry or bake the patties.
Serve with choice buns and enjoy!
