8 Oz Pasta
2 Fruit, without skin and seed Avocados
1 Tsp Olive Oil
2 Medium (2-1/2" dia) Onions
2 Clove Garlic
1 Cup Fresh Cilantro
3/4 Tsp Crushed Red Pepper Flakes
1 Dash Salt
1 Lime yields Lime Juice
Cook the pasta according to package instructions.
Drain and reserve 1-2 cups pasta water
While pasta is cooking, add the rest of the ingredients to your blender and blend until it turns into a smooth sauce.
Start with ¾ cup of pasta water and add more as needed to get the consistency you want.
Toss the pasta with the sauce in a bowl and serve immediately.
This sauce is best served the day it is made, as it uses avocados which begin to brown.
