2 Tbsp Olive Oil
1 Cup, chopped Onions
1 Tsp Crushed Red Pepper Flakes
2 Cloves, minced Garlic
2 Cup, cubes Sweet Potato
16 Oz Shrimp
3 Cup, chopped Kale
1 Dash Pepper
1 Dash Salt
In a saucepan, add the extra virgin olive oil over medium heat.
Add chopped onions and red pepper flakes.
Cook until onions are soft and golden.
Add garlic and cook for about 30 seconds.
Add chopped sweet potato and cook until soft, about 10-15 minutes.
If needed, add a few tablespoons of water to help steam the sweet potatoes.
Add shrimp and cook for 2-3 minutes, or until they turn pink.
Turn the heat to low and add kale, stirring until wilted.
Season to taste with salt and pepper.
