8 Oz Japanese Noodles
2/3 Cup Almond Butter
3 Tbsp Curry Paste
1 Cup Coconut Milk
Bring water to a boil in a large pot
Whisk together Coconut milk, almond butter, and curry paste.
[Optional add 1tbsp tamari for flavor]
Boil Soba noodles for a few minutes and then drain
Pour topping over Soba noodles in a clean bowl, garnish with mint, basil, or pepitas
