1/2 Cup Edamame
1 Cup 1/2" pieces Green Beans
1 Cup chopped, (1/2" pieces) Cauliflower
1 Cup, chopped or sliced Tomatoes
1 Cup, chopped Red Bell Pepper
4 Tbsp Olive Oil
6 Tbsp Lemon Juice
1 Cloves, minced Garlic
4 Tbsp Balsamic Vinegar
4 Tsp Thyme
Toss edamame and green beans with the chopped cauliflower, tomatoes, and bell pepper
In a food processor combine olive oil, lemon juice, garlic, balsamic vinegar and fresh thyme; pulse until smooth
Pour the dressing over the vegetables and toss to combine.
