3 Spray , about 1/3 second Pam Cooking Spray
1 Medium (2-1/2" dia) Onions
4 Oz Mackerel
1 1/2 Tbsp Light Mayonnaise
1 Tbsp Olive Oil
1/2 Tsp Dijon Mustard
1 1/2 Tsp Lemon Juice
1 Serving Lemonade
1/3 Tbsp Curry Powder
1 Large Egg, Hard-Boiled
Heat a sauté pan over low heat and spray well with non-stick spray.
Top onions with the smoked mackerel and heat on very low heat for 10-15 minutes.
Mix mayonnaise, olive oil, mustard, lemon juice, lemonade, and curry into a dressing
Meanwhile, add egg to a small sauce pan and cover with water.
Bring to a boil, remove from heat, cover, adn let rest 10 minutes before draining, rinsing, peeling, and slicing.
Serve all together with the curry sauce on the side.
