Ingredients

1 Cup, chopped Onions
2 Cloves, minced Garlic
2 Tbsp Ginger Root
1 Tbsp Olive Oil
1 Tbsp Curry Powder
1/2 Tsp, ground Cardamom
1/2 Tsp Cinnamon
1 Tbsp Mustard
1/4 Tsp Cayenne Pepperr
1/4 Tsp Allspice
1/4 Tsp Turmeric
1/4 Tsp Paprika
2 Medium Carrots
1 Cup Water
1 Cup Broadbeans
1/2 Medium whole (2-3/5" dia) Tomatoes
3/4 Cup Peas
1/4 Cup Coconut Milk
1/4 Cup Coconut Meat
1 Dash Salt
1 Dash Pepper

Directions

Pulse the onion, garlic, and ginger in the food processor until smooth

Heat olive oil in a large saucepan over low heat

Add the onion/garlic/ginger purée, cover, and cook about five minutes to mellow the flavor, stirring occasionally

Stir in the spices, then add carrots and water

Cook, covered, for 20-30 minutes, until carrots are tender

Add the fava beans, tomatoes, peas, coconut milk, coconut.

Salt and pepper to taste

Simmer another 10 minutes

Serve alone or over ½ cup of brown rice, quinoa, or bulgar wheat.
