2 Tbsp Canola Oil
1/2 Package yield, 12 oz Hashed Browns
1 Dash Salt
1 Dash Pepper
3/4 Cup, shredded Cheddar Cheese
4 Extra large Egg
1 Medium (4-1/8" long) Scallions
Preheat oven to 350 degrees F.
Add canola oil to large oven-safe skillet over medium-heat.
Add potatoes to skillet.
Season with salt and pepper.
Brown potatoes until crisp.
Add 1/2 cup cheddar cheese, eggs, remaining cheese, and scallions.
Bake for 10 minutes, or until eggs have set and cheese has melted.
