1 Tbsp Olive Oil
3 Oz Chicken Breast
1 Spray , about 1/3 second Pam Cooking Spray
3 Large Egg
1 1/2 Oz Parmesan Cheese
1 Dash Salt
1 Dash Pepper
3/4 Tbsp, chopped Basil


Heat oil in a pan over medium-high heat.

Add chopped chicken and cook for 7-10 minutes or until cooked through and no longer pink.

Coat a nonstick skillet with cooking spray and place over medium heat.

Lightly beat the eggs with a fork and add to the pan.

Cook, stirring, until halfway set.

Add the diced chicken and cheese cook through.

Add salt and pepper to taste.

Garnish with fresh basil and serve.
