1 1/2 Medium (7" to 7-7/8" long) Banana
1/2 Cup Buckwheat Flour
1 Tsp Coconut Oil
3 Tbsp Almond Milk
1/2 Cup Water
1/2 Cup, unthawed Blueberries, Frozen
1/2 Cup, thawed Strawberries
1 Tbsp Coconut Meat
2 Tbsp Honey
Mash the banana with a fork.
In a bowl mix the flour, mashed banana, melted coconut oil, milk, and water to a homogenous mixture.
Add more water, if the batter is too thick.
In a pan heat a bit of coconut oil and fry the pancakes on medium heat until they are gold brown on both sides.
Cook in batches, as needed.
Serve topped with berries, coconut, and honey.
