1 Tbsp Butter
1 Cup chopped Onions
1 Tsp packed Brown Sugar
1 Tsp Salt
1 Tsp Pepper
8 Fl oz Beer
1 Tbsp Dijon Mustard
1 Lb Bison
2 Cloves, minced Garlic
1 Tbsp Tomato Paste
2 Tsp Worcestershire Sauce
1 Tsp Paprika
4 Grams Hamburger Bun
1/4 Cup (8 fl oz) Barbecue Sauce
2 3/4 Oz Roasted Red Peppers
2 Cup Spinach
Melt butter in a skillet over medium heat.
Add onion and cook for 5 minutes.
Stir in brown sugar and a couple of pinches each of salt and pepper.
Reduce heat to medium low, cover, and heat for 15 minutes, stirring occasionally.
Add 1/2 cup beer, raise heat to medium, and cook until little beer remains.
Stir in mustard.
Preheat grill to medium high.
In a large bowl, gently mix together bison, 1/3 cup beer, garlic, tomato paste, Worcestershire, paprika, and salt and pepper to taste.
Form into 4 patties.
Grill for 5 minutes on each side, or until cooked through.
Serve burgers on toasted buns and topped with barbecue sauce, onions, roasted red pepper, and spinach.
