2 Tbsp Olive Oil
1 Medium (2-1/2" dia) Onions
16 Oz Ground Beef
2 Can Tomatoes
2 Tbsp Tomato Paste
1/4 Tsp Chili Powder
1 Dash Salt
1 Dash Pepper
4 Oz White Corn Tortilla Chips
1/2 Cup, shredded Cheddar Cheese
1/4 Cup Sour Cream

Heat saucepan, add olive oil and diced onion, cook over medium heat for 5-8 minutes until softened.
Add ground beef and cook for 5 minutes.
Dice tomatoes and add them to pan.
Add tomato paste and simmer for 5 minutes, then add chili powder, salt, and pepper.
Continue cooking until meat is cooked through and onions are tender.
Spoon onto plate(s) and add corn/tortilla chips.
Serve with grated or melted cheese and a dollop of sour cream.
Garnish with parsely.
