1 Tbsp Olive Oil
16 Oz Shrimp
1/4 Cup, chopped Onions
2 Fruit (2" dia) Limes
1 Tsp Olive Oil
1 Dash Salt
1 Dash Pepper
1 Fruit, without skin and seed Avocados
1 Medium whole (2-3/5" dia) Tomatoes
7 Pepper Jalapeno Peppers
1 Tbsp Fresh Cilantro
Heat 1 tbsp oil in a sauté pan over medium heat.
Add shrimp and sauté for 4-5 minutes or until bright pink and tender.
Remove from heat and set aside to cool and then chop.
In a small bowl combine red onion, lime juice, olive oil, and a pinch of salt and pepper.
Let them marinate at least 5 minutes to mellow the flavor of the onion.
In a large bowl combine chopped shrimp, avocado, tomato, an jalapeño.
Combine all the ingredients together, add cilantro and gently toss.
Adjust salt and pepper to taste.
