1 Tbsp Olive Oil
1 Cup, pieces or slices Mushrooms
1/3 Cup, chopped Red Bell Pepper
1/3 Cup, chopped Green Bell Pepper
1/2 Cup Spinach
3 Extra large Egg
2 Slice (3/4 oz) American Cheese
Clean the spinach off and place it into a pan while still wet.
Cook on medium heat and season with salt and pepper.
Once the spinach is wilted (2-3 minutes), add the onion, bell pepper, and mushroom, and cook until the onions are translucent, the pepper chunks are soft, and mushrooms are tender.
Whisk the egg whites with the almond milk.
Add the eggs to the pan and scramble until cooked.
Top with salt and pepper.
