1 Tbspn Extra Virgin Olive Oil
1/3 Grams Roasted Red Peppers
1/4 Medium (2-1/2" dia) Onions
1/2 Medium Baby Zucchini
1/2 Cup Alfalfa Sprouts
1/4 Fruit, without skin and seed Avocados
1 Tbsp Classic Hummus
2 Slice Whole-Wheat Bread


Toss peppers, zucchini and onion in olive oil.

Roast the vegetables in the oven at 400 F for approx.

20 mins.

Remove when done and cool.

Smash the avocado into the hummus then spread on the bread slices.

Add in the roasted vegetables to assemble.
