1 Medium (2-1/2" dia) Onions
1 Clove Garlic
2 Tbsp Olive Oil
1 3/4 Cup White Beans
1/4 Cup Sun-Dried Tomatoes
1/2 Lemon yields Lemon Juice
2 Tbsp Parsley
2 Tbsp chopped Chives
1 Tbsp Water
1 Cucumber (8-1/4") Cucumber
1 Dash Salt
1 Dash Pepper
Roughly chop the onion and garlic.
Fry them in one tbsp oil for a couple of minutes over medium heat until lightly browned.
When ready, throw both into a large mixing bowl.
Drain and rinse the beans and place them in the bowl.
Finally, add the rest of the ingredients and using a hand blender, give it all a good blend.
Alternatively throw it all in a food processor instead.
Serve with cucumber slices.
