1/2 Cup Coconut Meat
1/2 Cup Buckwheat Groats
1 Beet (2" dia) Beets
6 Date, pitted Dates
1/4 Tsp Vanilla Extract
Place coconut and buckwheat into a food processor fitted with the S blade and process into a fine flour.
Add beetroot, pitted dates, vanilla extract and process until well combined.
Wet hands a little bit with water and roll spoonful of the dough into little balls.
Roll in shredded coconut and place them on a sheet of baking paper.
For the best result, let sit them in the fridge overnight to firm.
Transfer to an airtight container and store in the fridge.
