1 Potato small (1-3/4" to 2-1/4" dia) Red Potatoes
1 Sweetpotato, 5" long Sweet Potato
1 Tsp Olive Oil
1 Spray , about 1/3 second Pam Cooking Spray
3 Tbsp Buttermilk
1 Tbsp Light Mayonnaise
1 Tbsp chopped Shallots
1 Tsp chopped Chives
1 Tsp Dijon Mustard
1/2 Tsp Pepper
1/2 Tsp Salt
1 Stalk, medium (7-1/2" - 8" long) Celery
Preheat oven to 425 degrees F.
Combine red and sweet potatoes with oil on a baking sheet coated with cooking spray; toss to coat.
Bake for 20 minutes or until potatoes are tender.
Combine buttermilk and next 6 ingredients (through salt) in a large bowl; mix well.
Add potatoes and celery; toss well.
Serve immediately.
