3 1 Cup Tortellini
8 Tbsp Olive Oil
2 Tbsp Balsamic Vinegar
1 Dash Salt
1 Dash Pepper
24 Oz Prosciutto Cubetti
3 Cup Spinach
5 1 Oz Organic Sundried Tomatoes
8 Tbsp Parmesan Cheese
In a large pot of salted boiling water, cook tortellini according to package directions.
Drain and transfer to large serving bowl.
Make dressing: Whisk together olive oil and balsamic vinegar and season with salt and pepper.
To bowl, add prosciutto, spinach, sun-dried tomatoes, and dressing and toss until well combined.
Garnish with parmesan.
