Ingredients

3 Strip Bacon
1 Pie crust (average weight of 1 frozen cr Pie Crust
4 Extra large Egg
1/2 Cup, shredded Swiss Cheese
1/2 Cup, shredded Cheddar Cheese
1/2 Cup Almond Milk
1 Cup Half And Half Cream
1/2 Cup Spinach
3 Tbsp chopped Onions
1/2 Tsp, ground Pepper
1/2 Tsp Salt
1 Medium whole (2-3/5" dia) Tomatoes

Directions

Cook bacon to desired crispiness in a pan over medium heat.

Drain, chop, and set aside.

Preheat oven to 350 degrees F.

Place the pie crust in a 9" round cake pan.

Freeze for 15 minutes.

Line the pie crust with parchment pepper and fill with baking weights (e.

g.

dry beans, rice, etc).

Par bake the pie crust for 15 minutes.

Remove from oven, discard weights and parchment.

Meanwhile, in a mixing bowl, combine the beaten eggs, cheeses, milk, half and half, bacon, spinach, onion, pepper, and seasoned salt.

Pour the mixture into the prepared pie crust and even out if needed.

Top with the sliced tomatoes.

Bake for 45 minutes or until a toothpick inserted into the center comes out clean.

Cool on a wire rack for at least 15 minutes before serving.
