1 Medium whole (2-3/5" dia) Tomatoes
1 Medium (2-1/2" dia) Onions
1 Tbsp Parsley
1 Large Egg
1 Oz Parmesan Cheese
1 Tbsp Salt
1 Tbsp Pepper
1 Shell Puff Pastry
Preheat oven to 375 degrees F and spray a muffin tray with cooking spray.
Dice the tomato, onion, and parsley.
Combine the above with eggs, grated cheese, and salt amd pepper in a large bowl; mix well.
Put pastry circles into muffin trays and fill with the mix (use a cookie cutterr to cut puff pastry into large circles).
Bake for 10-20 minutes or until golden brown.
