1 Tbsp Olive Oil
3 Clove Garlic
1 Cup, chopped Onions
3 Tomato Roma Tomatoes
4 Tsp Curry Powder
1 Tsp Salt
1/2 Tsp Pepper
9 Oz Tofu
Heat a pan over medium heat; add the olive oil.
Chop garlic and onions, add to pan.
Let cook while mixing until onion is almost transparent, about 5-6 minutes.
Chop tomatoes, add them to the pan.
Cover and let cook until tomatoes have released their juices, about 5 minutes, mixing often.
Add curry, salt, and pepper to the pan.
Smash tofu with a fork until no big pieces are left.
Add tofu to pan and mix well.
If it´s too wet, let it cook off the extra tomato water for a bit.
