5 Oz Tofu
1 Large Sweet Potato
2 Tbsp Coconut Oil
1 Cup Spinach
1 Cup diced Mushrooms
1 Cup chopped Onions
1 Dash Salt
1 Dash Pepper
Wrap tofu in an absorbent towel and cover with something heavy (like a cast iron pan) for about 15 minutes.
Dice tofu and sweet potato.
Heat oil in a sauté pan over medium heat.
Sauté until tofu is browned and potatoes are fork tender.
Add spinach, mushrooms, and onions.
Sauté until tender.
Season with salt and pepper and enjoy!
