3 Oz Yellow Polenta
6 Tbsp Wheat Flour
1/2 Tsp Baking Powder
3 Large Egg
3 Oz Sour Cream
1 Can (303 x 406) Corn
2 Medium (4-1/8" long) Scallions
2 Tbsp chopped Chives
1/2 Pepper Poblano Pepper
1 Dash Salt
1 Dash Pepper
2 Tbsp Olive Oil
Put the polenta, flour, and baking powder in a bowl, make a well in the centr.
r Gradually add the eggs and mix to a smooth batter.
Stir in the sour cream, sweetcorn, spring onions, chives, chopped poblano, and season with salt and pepper to taste.

Heat oil in pan over medium heat.
Add fritters and fry until golden brown on both sides.
