6 Tsp Olive Oil
1 Cup, pieces or slices Mushrooms
1 Cup chopped Celery
4 Oz Shallots
12 Tsp Garlic
8 Cup Chicken Broth
3 Cup chopped Broccoli
3 Cup Spinach
3 0 Cup dry Orzo
2 Cup Sauce, Pesto, Classico, Basil Pesto, Ready-To-Serve
In an 8-quart saucepot, heat olive oil on medium.
Add salt, celery, shallots, and garlic.
Cook 8 minutes or until golden, stirring.
Then add broth and broccoli.
Heat to simmering on high.
Reduce heat to medium-low; and simmer for 15 minutes, stirring occasionally.
Add spinach, mushrooms and orzo.
Let simmer for 8 to 10 minutes or until starches and veggies are softened.
Remove from heat.
Stir in basil pesto to taste.
