1 Small Onions
1 Cup, pieces or slices Mushrooms
5 Medium (approx 2-3/4" long, 2-1/2 dia.) Red Bell Pepper
3 Cup Spinach
1/2 Tsp Olive Oil
1 Dash Salt
1 Cup Egg White


Preheat oven to 375 degrees F.

Sauté 1 small diced onion, 1 cup chopped mushrooms, 1/2 of a red pepper, diced, and 3 cups spinach in 1/2 tsp olive oil until tender, about 10 minutes.

Season with salt.

Distribute mixture evenly into 9 pepper halves.

Add 2 tbsp egg whites.

Bake for approximately 45 minutes or until eggs are set
