1 Package (10 oz) Spinach
1/2 Cup, chopped Scallions
1 1/2 Cup Artichoke Hearts
1/3 Cup, chopped Red Bell Pepper
1 Cloves, minced Garlic
1 Tbsp Dill
8 Large Egg
4 Egg white (separated from yolk) Egg White
1/4 Cup Lowfat Milk
2 Tbsp Parmesan Cheese
1 1/4 Tsp Salt
1/4 Tsp Pepper
1 Spray , about 1/3 second Pam Cooking Spray
1/2 Cup, crumbled Feta Cheese
Preheat the oven to 375°F.
Grease a 9 x 13 baking dish with cooking spray.
In a small bowl combine
spinach, scallions, chopped artichokes, diced red pepper, garlic and dill.

In another bowl, whisk together the eggs, egg whites, milk, parmesan, salt and pepper.
Mix in feta cheese and pour over vegetables.
Bake until a knife inserted near the center comes out clean, 32 to 35 minutes.
Let stand 8 to 10 minutes before cutting into 8 pieces.
