Spinach and Mushroom Wrap

2 Tbsp Olive Oil
3 Mushroom Mushrooms
1 Tbsp chopped Onions
1 Clove Garlic
3 1/2Cup Spinach
2 Medium Egg
1 Dash Salt
1 Dash Pepper
2 Wrapper, eggroll (7" square) Wonton Wrappers
1/2 Cup, shredded Cheddar Cheese


Preheat oven to 350 degrees F.

Heat oil in a pan over medium heat. Sauté mushrooms and onions until onions are translucent and mushrooms are tender, about 5-7 minutes. Add garlic and sauté until fragrant, about 1 minute. Add spinach and sauté until just wilted, 1-2 minutes.

Scramble the egg, and then pour over the mushroo/spinach mixture.

Salt and pepper to taste.

Lay flat the wonton wrapper. Spread the grated cheese and top with the eggs.

Wrap and bake in oven for 15 minutes. Enjoy!
