1/2 Cup Olive Oil
1 Cup, chopped Onions
1 Tbsp Ginger Root
1 Cloves, minced Garlic
1 Tbsp Paprika
1 Tbsp Salt
1 Tbsp Turmeric
2 Cup Water
4 Potato medium (2-1/4" to 3-1/4" dia) Potato
1 Package (10 oz) Spinach
Add olive oil to a large pan over medium heat.
Once hot place chopped onions in and fry until they are caramelized, 10-15 minutes.
Add ginger and garlic, and fry for 1 to 2 minutes.
Add paprika, salt, and turmeric.
Mix to coat.
Add water and potatoes and let the potatoes simmer on low heat.
When potatoes are fully boiled and water is almost dried, put roughly chopped spinach in and let cook for 7-10 minutes on medium heat.
