1 Fruit Avocados
0 Cup Lime Juice
1/4 Tsp Salt
1 Medium (2-1/2" dia) Onions
2 Medium whole (2-3/5" dia) Tomatoes
8 Oz Chicken Breast
3 1/2 Oz Field Greens Salad Mix
4 Medium (approx 5" dia) Taco Shells
To make the guacamole: in a medium bowl, mix the avocado, lime juice, and salt.
Adjust the salt if needed
Add the minced red onion and minced tomatoes.
Mix well then set aside
Over medium - high heat, on a griddle or barbecue grill, grill both sides of the chicken until cooked through, about 5-7 minutes per side, or until no longer pink.
Slice
Fill up the taco shells with the salad leaves, guacamole, chicken, sliced tomatoes, and onions.
