1/2 Fillet Sockeye Salmon
1 Cup slices Beets
5 Cup shredded Lettuce
3 Tbsp Lemon Juice
1 Tbsp Olive Oil
Preheat oven to 425 degrees F.
Line a baking tray with foil and spray with non-stick spray.
Add salmon to the pan, skin side down.
Roast salmon on a sheet in the oven for about 12 minutes or until it becomes opaque.
Flake salmon into pieces about 1" square.
Shred the lettuce.
Add the salmon and beets.
Dress with olive oil and lemon juice.
