2 Small Red Bell Pepperr
1 Small Onions
1 Large Zucchini
1 Jalepeno Jalepeno
1 Cup, sliced Green Bell Pepperr
1 Cup Corn
1 Tbsp Olive Oil
2 Tsp Chili Powder
1 Dash Salt
1 Dash Pepper


Preheat oven to 375°F.

On a large baking sheet combine chopped peppers, onion, corn, zucchini, and jalapeno.

Toss with olive oil, chili powder, salt and pepper.

Bake for 10 to 15 minutes or until veggies are tender.

Note: recommended to be served over rice or salad greens.
