2 Medium Squash
1 Extra large Egg
1 Cup Panko
1 Tsp Salt


Preheat oven to 350 degrees F.

Slice squash into rounds approx 1/4" thick.

Beat egg in a bowl and pour panko into a seperate small, shallow dish.

If desired, mix panko with salt and any desired spices.

Dip each squash slice in egg, shaking off excess, then dip it in panko, coating both sides, and place on a greased baking sheet.

Bake for 8-12 minutes, flip slices, and bake for another 8-12 minutes.

Serve warm.
