1 Large Onions
8 Cloves, minced Garlic
2 Cup sliced Mushrooms
1/4 Stick Butter
24 Oz Chicken Breast
1 Tbsp Olive Oil
1 Dash Salt
1 Dash Pepper
Preheat oven to 450 degrees F.
Prep chopped onions, garlic, and mushrooms.
Set aside butter.
Prep chicken breasts.
Season chicken with salt and pepper, to taste.
Heat a cast iron skillet over medium-high and coat with oil.
Toss in mushrooms and onions until glassy.
Add in garlic and cook a few more minutes.
Push vegetables to the side.
Add chicken breasts to pan and cook until browned.
Top with onions and mushrooms.
Drop butter into pan and baste over chicken.
Move to oven and cook for an additional 20 minutes or until internal temperature of chicken has reached 165 degrees F.
